Here's how to make them:


Soft Lemon Blueberry Cookies

Makes 12 cookies

Ingredients

  • 2½ cups almond flour
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • 1¼ cups plain Greek yogurt
  • 2 large eggs
  • ⅓ cup cane sugar
  • 1½ tsp fresh lemon juice
  • ¾ cup blueberries (fresh or frozen)

Directions

  1. Preheat oven to 275°F (135°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together the almond flour, baking powder, baking soda, and sea salt.
  3. In a large bowl, whisk together the Greek yogurt, eggs, cane sugar, and lemon juice.
  4. Stir the dry ingredients into the wet ingredients until just combined. Gently fold in the blueberries.
  5. Drop 1–2 tablespoons of batter onto the prepared baking sheet, leaving space between each cookie.
  6. Bake for 35–40 minutes, rotating the pan halfway through, until the edges are lightly golden.
  7. Allow to cool before enjoying.

Notes

  • Store in an airtight container for up to 3 days or freeze for longer storage.
  • Add lemon zest for an even brighter lemon flavour and/or vanilla extract.
  • Chopped walnuts, pecans, or sliced almonds make a delicious addition.
