One-Pan Creamy Tuscan Chicken

If you’re looking for a dinner that feels a little special but is actually incredibly easy to make, this One-Pan Creamy Tuscan Chicken is one to add to your regular rotation.

It’s been a family favourite in our house for years. In fact, it’s one of the meals my son requests when he comes home from university.

And I love that it’s so simple that he makes it for himself when he’s at university too!

That’s always a win in my books—a healthy meal that someone with any level of cooking skills can make is exactly the kind of recipe I want to share.

A simple dinner that checks a lot of boxes

When you're trying to eat well, I think the recipes that matter most are the ones you’ll actually make - and taste so good they work as leftovers too.

This chicken is:

  • High in protein, with about 34 g per serving to help keep you satisfied
  • Made in one pan, which means less cleanup
  • Ready in about 40 minutes (but 20 minutes is just to simmer not actual prep)
  • Full of flavour from sun-dried tomatoes, Kalamata olives, artichoke hearts and Mediterranean-inspired herbs
  • Great for leftovers, so you can get another meal out of the work you’ve already done

For busy women juggling work, family and everything else on their plates, having a handful of reliable meals like this can make healthy eating so much easier.

You don't need elaborate recipes or hours of meal prep. Sometimes you just need a few simple ingredients and a dinner you know everyone will enjoy.

And the protein is a bonus

Each serving provides approximately 34 grams of protein.

Protein is important at every stage of life, but it becomes particularly important as we near perimenopause and menopause because maintaining muscle mass and strength becomes more challenging.

Getting enough protein throughout the day can also help with satiety, which means you're more likely to feel satisfied after your meal rather than finding yourself looking for something else to eat an hour later.

I find that having a few easy, protein-rich dinners in my back pocket makes it much easier to stay consistent with healthy eating—especially on busy weeks.

Make it once, eat it again

This recipe makes three generous servings and the leftovers keep well in the fridge for up to three days.

That makes it a great option for meal prep, too.

You can make it on a Sunday or Monday and have an easy lunch or dinner ready to go later in the week.

Serve it with:

  • Brown rice or wild rice
  • Quinoa
  • Cauliflower rice
  • Roasted potatoes
  • A piece of whole-grain or sourdough bread
  • An extra serving of vegetables

You can also add a simple green salad on the side for even more vegetables and fibre.

One of those recipes the whole family can enjoy

One of my favourite things about this recipe is that it doesn't feel like "healthy food."

It’s creamy, flavourful and satisfying—and it's something my family actually asks for.

That's really what I want healthy eating to look like.

Not a collection of bland meals that you force yourself to eat because they're "good for you."

Real food. Lots of flavour. Enough protein to keep you satisfied. Plenty of vegetables. And recipes that fit into your actual life.

Because when you have meals you genuinely enjoy, healthy eating becomes a whole lot easier to stick with.

One-Pan Creamy Tuscan Chicken

Serves: 3
Prep + Cook Time: Approximately 40 minutes

Ingredients

  • ⅓ cup sun-dried tomatoes, drained and chopped (I left mine whole to save time)
  • 1 lb boneless, skinless chicken thighs
  • 1¾ cups full-fat canned coconut milk
  • ½ cup Kalamata pitted olives, drained and sliced (I left mine whole to save time)
  • ⅔ cup artichoke hearts, drained and chopped
  • 2 tsp Mediterranean spice blend
  • Sea salt and black pepper, to taste
  • 2 cups baby spinach, tightly packed

Directions

  1. Heat a large pan over medium heat. Add the sun-dried tomatoes and cook for 1–2 minutes.
  2. Add the chicken and cook for about 5 minutes on one side.
  3. Add the coconut milk, Kalamata olives, artichoke hearts and Mediterranean spice blend. Season with salt and pepper.
  4. Cover and simmer for about 20 minutes, flipping the chicken halfway through, or until the chicken is cooked through.
  5. Stir in the spinach and cook for another 1–2 minutes, until wilted.
  6. Serve with your choice of rice, quinoa, cauliflower rice, roasted potatoes or flatbread, along with extra veggies or a simple salad.

Notes

Leftovers: Refrigerate in an airtight container for up to 3 days. Freeze for up to 3 months.

Serving size: One serving is approximately two chicken thighs with ½ cup of vegetables and sauce.

For more flavour: Add fresh garlic and/or diced onion when cooking the sun-dried tomatoes.

A nutritious dinner doesn't have to be complicated

The goal isn't to cook perfectly or make everything from scratch.

It's to have a few meals you know your family enjoys, that give you the protein and nourishment you need, and that you can realistically make on a busy weeknight.
