Oat Flour Chocolate Chip Banana Bread

I honestly didn’t intend to become the household banana pusher… but groceries are expensive these days, and when I saw a bulk case of bananas on sale, I simply couldn’t resist.

At the time it felt like a responsible financial decision.

Now it feels like bananas are EVERYWHERE and time is running out to use them up before they all turn brown!

At one point my husband looked around the kitchen and joked that soon we’d all be making monkey noises.

So naturally… banana recipes became necessary 😆

I've whipped up a few of these oat flour banana bread loaves and popped them in the freezer, packed them in lunches, and even brought them to a BBQ over the weekend (they got rave reviews!).

This banana bread recipe is more balanced than traditional banana bread and it's nice to be able to control the amount of sugar added. The oat flour gives it a softer, heartier texture while adding a little extra fibre, and the bananas provide plenty of natural sweetness on their own, making it easy to cut back on the sugar.

    And honestly, when you’re trying to avoid wasting food (or an entire banana caseload), recipes like this become essential.

    Oat Flour Banana Bread Recipe 

    Ingredients

    • 3 ripe bananas, mashed
    • 2 eggs
    • 1/3 cup maple syrup or honey (or less, to taste)
    • 1/3 cup melted butter or coconut oil
    • 1 tsp vanilla extract
    • 2 cups oat flour
    • 1 tsp baking soda
    • 1 tsp cinnamon
    • 1/2 tsp sea salt

    Optional Add-Ins (I added dark chocolate chips, walnuts & ground flaxseeds)

    • 1/2 cup dark chocolate chips
    • 1/3 cup chopped walnuts or pecans
    • 2 tbsp ground flax or chia seeds

    Instructions

    1. Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
    2. In a large bowl, mash bananas until mostly smooth.
    3. Add eggs, maple syrup, melted butter or oil, and vanilla and mix well.
    4. Stir in oat flour, baking soda, cinnamon and sea salt. Mix until just combined.
    5. Fold in any optional add-ins.
    6. Pour batter into loaf pan and smooth the top.
    7. Bake for 45–55 minutes, or until a toothpick inserted in the centre comes out clean.
    8. Allow to cool before slicing.

    Notes

    • You can make your own oat flour by blending rolled oats until fine.
    • These also work great as muffins or mini loaves (as shown in the pic). Just reduce your cooking time to about 25min.
    • Store in the fridge for best freshness or freeze extras for busy weeks.
