Homemade Almond Milk

Homemade Almond Milk - No Gums, Fillers or Added Sugar!

If you've ever picked up a carton of almond milk at the grocery store and wondered what half of the ingredients are, you're not alone. While many store-bought almond milks are fortified with vitamins and minerals, they can also contain gums, emulsifiers, oils, and added sugars.

Making your own almond milk at home is surprisingly simple and requires just two ingredients: almonds and water. The result is a creamy, fresh-tasting milk that's perfect for smoothies, overnight oats, chia pudding, and baking. And, one of the benefits of making your own almond milk is that you can customize it to your taste. Keep it plain and unsweetened, or add a touch of cinnamon, vanilla, or dates for natural sweetness.

Homemade Almond Milk Recipe

Ingredients

  • 1 cup raw almonds
  • 4 cups filtered water (plus more for soaking)
  • Optional: 1-2 dates, 1 teaspoon vanilla extract, or a pinch of cinnamon

Instructions

  1. Place almonds in a bowl and cover with water. Soak overnight or for at least 8 hours.
  2. Drain and rinse the almonds.
  3. Add the soaked almonds and 4 cups of fresh filtered water to a high-speed blender. Blend for 1-2 minutes until smooth and creamy.
  4. Pour the mixture through a nut milk bag, cheesecloth, or a fine mesh strainer into a large bowl or jug. Squeeze well to extract all of the liquid. (I often don't strain mine only because I don't mind the bits in my smoothies, baking or overnight oats).
  5. If desired, blend the strained almond milk with dates, vanilla, or cinnamon for additional flavour.
  6. Transfer to a glass jar or bottle and store in the refrigerator for up to 4 days. Shake well before using, as natural separation will occur.

Makes approximately 4 cups.

Nutrition Tip

Homemade almond milk won't taste exactly like the carton varieties you're used to—and that's a good thing! It's richer, fresher, and contains only real food ingredients. Because it doesn't contain stabilizers or emulsifiers, separation is completely normal. Simply give it a good shake before pouring.

  • Homemade granola
  • Energy bites
  • Muffins or cookies
  • Almond flour crackers
  • Smoothies or oatmeal

Reducing food waste is always a win in my kitchen and reducing gums, emulsifiers and additives from my food is another win!
